Parmesan Pasta Salad


1 1/3 cup whole wheat rotini pasta, dry

1 1/3 tbsp organic Italian dressing

1 1/3 tbsp grated Parmesan cheese

1 cup cubed rotisserie chicken

1 cup packed small broccoli florets (lightly steamed, if desired)

1 cup drained, canned, quartered artichoke hearts

Active Prep: 10 minutes

Serves: 2

Serving Size: 2 cups



1.   Boil pasta according to package directions. Drain well and let cool slightly. Transfer to bowl.

2.  Stir in Italian dressing and Parmesan cheese.

3.  Add chicken, broccoli, and artichoke hearts (if desired).
