Unpacked Energy Balls
Do you love store-bought bars but hate how expensive they are? Try our homemade version of an energy bar! Packed with dried apricots, nuts, and rolled oats, these little balls will power your child through their days of play and school.
2/3 cup unsulfured dried apricots
2/3 cup dry old-fashioned rolled oats
1/4 cup unsweetened almond butter
1/4 cup roasted salted cashews
3/4 tsp. pure vanilla extract
1/8 tsp. sea salt (optional)
Add all ingredients to a food processor along with 1 Tbsp. cold water.
Cover and blend until a crumbly paste forms. Add additional water by 1/2 tsp. to create a sticky consistency.
Firmly roll by hand into 16 balls, about 1 Tbsp. each.
Chill in refrigerator.
Serve one ball along with lunch or two balls for a balanced snack.
