These simple taquitos can be assembled in just 8 minutes! Relying on some store-bought ingredients like rotisserie chicken, shredded Monterey Jack cheese, whole grain tortillas, and salsa makes these a super easy staple for the school lunchbox.
1 whole grain flour tortilla
1/2 cup rotisserie chicken, white meat, shredded
1/4 cup Monterey Jack cheese, shredded
1 Tbsp. salsa verde
1 tsp. sunflower oil (high-oleic)
Preheat oven to 425⁰F.
On the bottom half of the tortilla, arrange the chicken.
Top chicken with salsa.
Top entire tortilla with cheese.
Tightly roll up and brush with oil.
Place on baking sheet and bake until crisp and browned, about 16 to 18 minutes.
Let taquitos cool directly on rack.
