Not your traditional banana pudding, but super fast & super delicious. Great served with a sprinkling of graham cracker crumbs and banana slices for a kind of deconstructed banana cream pie.

Ingredients
1 small banana, fully ripened
1/4 cup Neufchatel (light cream cheese)
1 tsp. honey
1 tsp. pure vanilla extract
1/2 tsp. lemon juice
1/8 tsp. sea salt
Directions
Whip together all ingredients using an electric mixer until creamy.
Add to sealed container and chill.
Recipe Note
Neufchatel is a French cheese named after a town in France that is an unripened cheese made with cow milk. In American production, it is made with both milk and cream and tastes much more like cream cheese. The main difference between Neufchatel and cream cheese is their fat content: cream cheese must contain at least 33% milk fat whereas American Neufchatel weighs in with about 23% milk fat. Keeping intake of saturated fat low in a child's diet is why we recommend making this switch. But if you can't find it or don't enjoy the taste, just use cream cheese in this recipe.
