Our mission is to help busy parents feed their kids well. Parents have so much on their plates these days. It is impossible to keep up with everything. I know what it feels like to scramble to pack a lunch before running out the door. I know what it feels like to fall into the habit of packing the same thing every day because you don't have the mental space to do any better. I know what it feels like to struggle with picky eaters. Desperate for change, I created Lunch Unpacked to get back on track with exposing my kids to a wide variety of wholesome foods and to say goodbye to the mental burden of meal planning. With the help of a nutritionist and trained chef, we've put together a lunch packing solution that will help you make healthy and delicious lunches without a crazy-level of effort.
After spending more than a decade climbing the corporate ladder, balancing the demands of work and family stopped Lauren in her tracks. Jackie is a classically-trained chef, registered dietitian nutritionist, award-winning cookbook author, recipe developer, and media personality. She's the author of several cookbooks, a healthy cooking instructor at the Institute for Culinary Education, and a food writer. Jackie has made guest appearances on dozens of television news shows. For nearly a decade, Jackie was a consultant for "Healthy Children Healthy Futures," a national after-school nutrition and fitness program designed for city kids and parents.
